Playing Catch Up: Fourth of July

This hardly needs explanation. We hung out at home on July 4th. Late at night, we drove across town to watch the remainder of fireworks from the car without battling crowds (except for traffic) and zero mosquitoes.
These are the beet chocolate cupcakes with buttercream I mentioned in my previous post. They were delicious. My first attempt too.





My kids like to burn things.

This is the recipe I use. like it with chocolate ganache. Which the simplest recipe I found for is to put 2/3 c. cocoa, 1-2/3 c. sugar, 1/2 c. milk (or 1-1/4 c. water though I prefer milk), and 1 t. vanilla into a sauce pan and heat on low while whisking. Pour this over the cake (do it i...n a bunt pan for prettiness) and sprinkle with powdered sugar. Tis awesome.

Otherwise, buttercream is something like this.
